Cinnamon Chocolate Bread Pudding

I don’t know why I don’t make this more often, because it is delicious and very easy to make.

I serve mine with a drizzle of syrup and some diced pineapple on the side. Yum!

  • 2 cups bread cubes *tip, cut one slice of bread at a time into cubes for best results
  • ½ cup brown sugar
  • ¼ tsp cinnamon
  • 2 tsp cocoa powder
  • 2¼ cups milk (any percent works, I use skim)
  • 2 eggs, slightly beaten
  • 2 TBS butter

Optional add-ins:

  • 1 tbsp rum
  • ½ cup chopped nuts
  • ½ cup raisins
  1. Preheat oven to 375°F
  2. Combine all ingredients (except for butter) lightly with a spatula in a quart sized casserole or baking dish. *The cocoa powder doesn’t dissolve, so don’t be alarmed. Just make sure it’s not in large clumps.
  3. Dot with butter.
  4. Bake for 45 minutes. Allow bread pudding to rest on the counter for about 10-15 minutes after you pull it out of the oven.

Serve warm or room temperature. Tastes great drizzled with syrup or with vanilla ice cream. Enjoy!

*Cover with Saran wrap or a lid and keep in the refrigerator.
