I don’t know why I don’t make this more often, because it is delicious and very easy to make.
Cinnamon Chocolate Bread Pudding
Printer Friendly Version: Cinnamon Chocolate Bread Pudding
- 2 cups bread cubes *tip, cut one slice of bread at a time into cubes for best results
- ½ cup brown sugar
- ¼ tsp cinnamon
- 2 tsp cocoa powder
- 2¼ cups milk (any percent works, I use skim)
- 2 eggs, slightly beaten
- 2 TBS butter
- 1 tbsp rum
- ½ cup chopped nuts
- ½ cup raisins
- Preheat oven to 375°F
- Combine all ingredients (except for butter) lightly with a spatula in a quart sized casserole or baking dish. *The cocoa powder doesn’t dissolve, so don’t be alarmed. Just make sure it’s not in large clumps.
- Dot with butter.
- Bake for 45 minutes. Allow bread pudding to rest on the counter for about 10-15 minutes after you pull it out of the oven.
Serve warm or room temperature. Tastes great drizzled with syrup or with vanilla ice cream. Enjoy!
*Cover with Saran wrap or a lid and keep in the refrigerator.
